Some fish do get thirsty in a fishy sort of way, and some do not. Saltwater fish lose body water to the salty sea, so they drink seawater and remove the extra salt; freshwater fish gain too much water and usually avoid drinking.

The funny part is that the same basic body problem flips when the water changes. A tuna has to keep replacing water, while a goldfish is busy getting rid of it, all because water moves toward saltier places through thin body surfaces.
