Cheese stretches when heat loosens its protein strands and melts the fat between them. In cheeses like mozzarella, those proteins can slide into long lines while still holding together, so a warm bite pulls into strings instead of snapping apart.
Different cheeses behave differently because their protein structure and moisture are not the same. Mozzarella is built for a good pull; older cheddar usually turns soft and rich, but its shorter, tighter proteins do not make the same long strands.
